CHEESE WHEEL

      This would really be good for that Mother's Day brunch. You can serve it as whole slices or as small finger food.

  • 1 Package Dry Yeast
  • 2/3 Cup warm Water
  • 2 Cups Flour
  • 2 Tablespoons Oil
  • 1/2 teaspoon Sugar
  • 1/2 teaspoon Salt
  • 1 Beaten Egg
  • 3 Cups Shredded Swiss Cheese
  • 1/2 Cup Parsley
  • 1/2 teaspoon Garlic Salt
  • 1/8 teaspoon Pepper
  • 1 Slightly Beaten Egg
Dissolve the Yeast in the warm water.
Blend in 1 cup Flour, Oil and Salt.
Stir in enough more Flour to make a stiff dough.
Knead 5-8 minutes.
Place in a greased bowl, cover and let rise for 1 hour.
Punch and divide into 2.
Cover and let rest 10 minutes.
Roll out one piece into a 13" circle.
Place on a greased pan.
Combine the 1st Egg, Cheese, Parsley, Garlic Salt and Pepper.
Spread over dough.
Roll out the rest of the dough.
Place it over the first one, trim and flute the edges.
Bake at 400 degrees F for 20 minutes.
Remove and brush the top with the 2nd Egg and 1 Tablespoon of Water.
Bake 12-15 more minutes and serve hot.

Makes 16-20 small finger food pieces.
