LIME PICKLES

     This is a very old recipe that comes from Irene Graham.

  • 2 Gallons of Water
  • 2 Cups of Lime
  • 7 Pounds of Cucumbers, sliced 1/2" thick.
Soak the Cucumbers in Lime for 24 hours.
Wash off with water and drain.
Soak in water for 4 hours.

Heat the following ingredients until dissolved;

  • 2 Quarts of Vinegar
  • 4 1/2 Pounds of Sugar
  • 1 teaspoon Mustard Seed
  • 1 Tablespoon Salt
  • 1 teaspoon Celery Seed
  • 1 Tablespoon Pickling Spice

Pour over Cucumbers.
Let stand overnight.
In the morning simmer for 35 minutes then put in jars.

This recipe makes 7 quarts of pickles and 3 extra quarts of pickle juice.
