RHUBARB CAKE

     This comes from Beverly S. in Kent, Washington.

  • 1 1/2 Cup Sugar
  • 1 Egg
  • 1/2 Cup Shortening
  • 1 Cup Sour Milk
  • 1 teaspoon Vanilla
  • 2 Cups Flour
  • 1 teaspoon Cinnamon
  • 1 teaspoon Soda
  • 1/2 teaspoon Salt
  • 3 Cups Diced Rhubarb
Cream the Shortening and Sugar together.
Add Egg and beat.
Sift all dry ingredients together and mix alternately adding Milk and Vanilla.
Pour into 9" X 13" pan then pour on the Rhubarb.

Top with the following:

  • 1/2 Cup butter or Margarine
  • 1/2 Cup Sugar
  • 1/2 Cup Flour
  • 1 teaspoon Vanilla

Mix until crumbly and put over the Rhubarb.
Bake at 350 degrees F for about 45 minutes.

This is really a classic dessert.
