OPEN HOUSE SPAHKOPEETA

With St. Patrick's Day coming on we've been looking for green recipes and this one fits the bill. Despite the very unusual name this casserole is really quite good.

  • 3 Beaten Eggs

  • 6 Tablespoons Flour

  • 10 oz. Chopped Spinach

  • 1 lb. or 2 Cups Cottage Cheese

  • 1/2 lb. or 2 Cups Grated Cheddar Cheese

  • 1/2 teaspoon Salt

  • Dash of Cream of Tartar

  • 1 Minced Onion

Beat the Eggs and Flour until smooth.
Mix in the rest of the ingredients.
Pour into a well greased 2 quart casserole dish.
Bake uncovered at 350 degrees F. for 1 hour.
