      Ken's mom collected many great recipes over the years and especially desserts. This wonderful summer taste treat comes from her old friend Helen Barnes, God rest her soul.

  • 1 Package of Lemon Jell-O
  • 1 1/4 Cup Boiling Water (you can use the juice from the berries instead)
  • 1 Pint Strawberry Ice Cream
  • 1 1/2 Cups Slice Fresh Strawberries, drained and sweetened slightly

  • 1 Pie Shell

Dissolve the Jell-O in hot water or berry juice.
Add the Strawberry Ice Cream by spoonfuls, stirring until blended.
Allow to chill until it starts to set but not firm, about 1/2 hour.
Stir in the drained Strawberries.
Put it in a Pie Shell and chill.
This is a really great summer dessert that we often had as kids.
