MAMA'S UPSIDE-DOWN CAKE

In loving memory of Betty Montgomery. This recipe was one of her very favorites and we thought you would enjoy it too.

Mama's Upside-down Cake

  • 1/2 Cup Butter
  • 1 Cup Brown Sugar
  • 1 Quart drained canned Pineapple or Peaches, or fresh Peaches
  • 1 Egg
  • 1 teaspoon Vanilla
  • 3/4 Cup Sugar
  • 1 Cup Flour
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking Powder
  • Butter size of egg
  • 1/2 Cup Warm Water
Put 1/2 Cup Butter and Brown Sugar in a skillet and melt.
Pour the Fruit on top.
Cream together Butter, Egg, Sugar and Vanilla.
In a separate bowl sift together dry ingredients.
Alternately add dry ingredients and warm water into the creamed mixture.
Pour on top of the Fruit.
Bake at 350 to 375 degrees F for 25 to 35 minutes.
Remove from oven and let set for 5 minutes.
Turn over on a serving plate.

After you fix this you'll see why it was one of Betty's favorites and one of ours. Her most favorite was to us Pineapple.
