CHOCOLATE ZUCCHINI BREAD

     Don't let the Zucchini scare you away this is really good sort of like a chocolate pound cake.

  • 3 Eggs
  • 1 Cup Vegetable Oil
  • 2 Cups Sugar
  • 1 teaspoon Vanilla
  • 2 Cups Shredded Peeled Zucchini (1 medium)
  • 2½ Cups Flour
  • ½ Cup Cocoa
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • ¼ Baking Powder
Mix Eggs, Oil, Sugar and Vanilla.
Stir in Zucchini.
Combine dry ingredients and add to Zucchini mix.
Pour into greased and flowered loaf pan or baking pan.
Bake at 350º F for 1 hour. If you use mini pans, bake for ½ hour.
Let cool and serve to your friends, they'll love it.
